This month we've wandered into Staffordshire Moorlands and discovered a gem — the Mill 630 from Paper Mill Distillery. It's their flagship London Dry, a classic yet carefully balanced gin that speaks of tradition with a little modern flair.

On the nose, it leans proudly into juniper — crisp, clean, familiar — but then a bright citrus peel threads through, and whispers of spice and floral lift it just enough. On the palate it dries out nicely, with that citrus edge softening into a gentle warmth (some hint at ginger) before it fades; it remains lively, never heavy. It's no wonder we picked it for our October 2025 Gin Club box.

All told, Mill 630 is a sterling example of how a London Dry should be done — clean, confident, and elegantly structured. In a G&T with a premium tonic and a twist of orange or lemon, it sings. This one's going straight into my "keeper" pile — a must-try for anyone who loves a juniper-forward, no-nonsense gin.
